Salsa Chicken…OLĖ!

I made up this recipe, so the amounts are inexact because I kind of eyeball it, but it’s easy and tasty so it’s worth trying as it could become a favorite in your house. Feel free to play around with the ingredients to make it a hit.

Salsa Chicken

1 pound chicken cutlets or stir fry strips

2 – 3 cups frozen chopped spinach

1 15 ounce jar salsa

Shredded Mexican cheese mix

Enough brown rice for however many you’re serving, 2 – 3 cups (if you like white rice better you can use that too)

Cut the chicken into bite-sized pieces. Fry in a pan with a tablespoon of olive oil. While it’s cooking, get your rice started.

Once the chicken is cooked through (about 5 minutes), add the spinach in to thaw and cook. After about 2 minutes, lower the heat to medium and add in the salsa. (If you like it “salsa-ier,” you can add more.) You want it to heat through, probably about 5 minutes.

Once the rice is done, put it on your plates, and cover with the salsa chicken combo. Sprinkle the shredded Mexican cheese on top. You may want to pop each plate into the microwave for 20-30 seconds so the cheese melts.

Serve it up!

Kitchen Short Cut

On the 5 minutes of the Nigella Lawson Express cooking show I saw a little over a week ago, she showed a short cut that I actually thought was brilliant. One of the things that always adds time to a recipe is how much chopping you have to do. But she used kitchen shears to cut scallions and bacon. She literally held the strip of bacon over the frying pan and snipped little pieces in. I tried it last night with chicken and it was great — easy, quick, plus no cutting board to clean!

Final Thoughts

There was no new Gossip Girl episode last night! Next week…apparently there are 13 new episodes to be run this season, so we’ve got a lot to see. It better be good after making us wait so long.

I, along with all of the other Philadelphia Eagles fans, am loving the Terrell Owens saga. Oh Dallas, it’s not like we didn’t tell you so…and Buffalo, don’t say we didn’t warn you. Good luck, suckers!

I like having it light out later, but pre-7 am it is dark and sad! (Maybe that’s just me.) I hope it gets better soon.

I feel like there should be mandatory deep breathing classes during the recession. Wouldn’t it do everyone some good?
